Head Of Operations reporting to Managing Director

The HOP is required to regularly and customarily exercises discretion in supervising the overall operation of the stores within the designated area. In particular, the majority of the time is spent on developing store management talent, overseeing the area’s store management workforce, making management staff decisions, ensuring area wide customer satisfaction and product quality, managing overall store compliance with Subway standards, managing individual store and area financial performance, working closely with each  regional store manager and store management team to maximise individual store profitability, and managing safety and security within the area.

This job contributes to the success of the franchise business by leading the regional managers and management team (ie Regional Managers, Multi Unit Managers and Store Managers) within assigned areas to create and maintain the Subway experience for our customers and partners.

The HOP is responsible for modelling and acting in accordance with Subway® and franchise company guiding principles.


  • Setting goals for each individual store in the group and the group as a whole, developing organisational capability, and modelling how we work together
  • Empowering regional store managers and store management teams to deliver exceptional customer service
  • Delegating appropriate responsibilities and practices to regional store managers and management teams
  • Promoting the culture, values and mission with integrity and honesty
  • Driving the implementation of company programs by developing action plans and directly motivating and instructing store managers and management team to implement them
  • Training, coaching and direction to store managers and management teams to support and encourage to achieve operational goals

Planning & Execution:

  • Developing strategic and operational plans for each individual store in the group and the group as a whole, managing execution and measuring results
  • Utilising existing tools to identify and prioritise communications, regularly using discretion to filter communications to regional store managers and management teams
  • Frequent, clear, concise, accurate and professional communications
  • Constantly monitoring and managing management staffing levels across the area, to ensure appropriate management levels in each region and stores to achieve goals
  • Overseeing Recruitment and attending interviewing
  • Recognising and rewarding performance
  • Conducting disciplinaries when required
  • Enforces high standards of operation in food quality and service, speed of service, hospitality and cleanliness


Business Requirements

  • Providing expertise and executing functional responsibilities
  • Regularly utilising management information tools and analysing financial reports, on both a weekly and periodic basis, to identify and address trends, issues and performance through regional store managers and management teams in their areas
  • Ensuring regional store managers and management teams are using all existing operational tools to plan for and achieve operational excellence in each store
  • Monitoring store managers accountability in achieving sales, costs and profitability targets
  • Ensuring store managers’ adherence to Subway corporate’s compliance standards, with focus on those standards relating to food safety
  • Proactively obtaining feedback from store managers, partners and customers to understand the specific needs of each group
  • Tracking all key indicators for each regional store manager and management teams


Store Manager Development/Team Building

  • Providing store managers and management teams with coaching, feedback and developmental opportunities and building effective teams
  • Challenging and inspiring regional store managers and management teams to achieve business results
  • Ensuring that store managers adhere to all legal requirements
  • Ensuring that store managers adhere to all established Subway operational standards
  • Developing and maintaining positive relationships with store managers and management teams
  • Actively managing regional store managers and management teams by regularly conducting performance assessments, providing feedback, and setting challenging goals to improve store manager performance
  • Identifying and supporting to develop individuals in the area that have potential to grow within the organisation
  • Recognises and reinforces Store Manager accomplishments
